A career as a chef is not for anyone who is unable to get themselves into peak physical condition, as there is a lot of physical work involved. You will need to be able to lift a reasonable weight, as some of the heavy cookware is not exactly light, especially when it is filled with heavy ingredients. There is also a fair degree of physical work involved in the actual preparation of some dishes. Anything which uses a dough which will have to be kneaded is an obvious example.
There is no doubt that the people who really make it to the top as chefs are great enthusiasts. They have to be, to keep going through the tough times and bounce back from the inevitable disappointments. This enthusiasm will lead them to be constantly learning and experimenting in their own kitchen at home. This is something you should be looking to bring in to your attempts to become a professional chef, as it will help you to progress far more quickly than if you were only learning in a class environment.
This type of home learning will be especially effective as a preparation for your time in a cooking school, and will allow you to get the best out of your time there. Even if you have managed to get your foot in the door of the profession by getting an entry level job, it is still a good idea to get as good a formal training as you can afford in a cookery school. There are a great many people working at low levels in the catering industry, and very few of them will ever go on to become chefs, much less head chefs. Every advantage you can give yourself may pay off in the future.
Head chef jobs are not difficult to find using the Internet, once you have reached the level where you can qualify for them. A head chef job is the pinnacle of your profession, and something every ambitious chef will want to work towards. Head chefs have knowledge and years of experience, so the enthusiasm to keep learning is a must. The great chefs will be the ones who are thinking about improving what they have, and developing new ideas, even when they are not in the kitchen. It takes more than just giving your all in your work hours to fashion a great chef career.
